Mama's Beginning

The Chicken Puppy.

The Mama Hen's group began this process with three new product ideas. A chicken n' waffle ball, a chicken cordon blue bite, and a buffalo chicken bite. Notice a trend?

When we were making the buffalo chicken bites, we had some left over material. someone said "we should just roll it in some bread crumbs". Thus, the chicken puppy was born.

After we decided on the ingredients for hedonic purposes, we decided to add some functional ingredients. Flour to increase viscosity, xanthan gum to add bind (structure), and modified cornstarch for adhesion of the batter and breading.

Chicken

First, we cook chicken breasts until they reach an internal temperature of 165° F. The we shred it into smaller pieces.

Make n' Mix

We mix together cheese, buffalo sauce, cream cheese, ranch powder, flour, xanthan gum and the cooked shredded chicken in a mixer.

​

Form

The team then forms an assembly line to form ~20g balls, predust them in modified corn starch, put them into a flour and water batter, and roll them in a breadcrumb mixture

Stick It

The puppies are ready for par-frying. We fry them for 1 minute until the breading is stuck on, and the color is a light gold. The rest is done by the consumer!
